INSPIRATION FROM PEACEFUL NATURE

Martin Dalsass loves to be close to nature as a balance and inspiration. When he harvests wild vegetables, Mediterranean herbs and edible flowers from his garden, forages fish or mushrooms or gives his soul space on skiing, hiking and bike tours, dishes appear in his head as spontaneous, emotional paintings. His culinary creations should also give a sense of the genuine force of nature. His dishes therefore have a structure and bite that supports all of the senses.
